Cardamom Liqueur: Cardamom with Lemon
My stocks of fine spirit are nearly used up. You could say it's the last of it, which needs to be put to good use. So why not give cardamom a try? It's such a nice, aromatic spice. Shall we steep it?

We can choose between green and black cardamom. The latter has a decidedly stronger aroma and goes well with stewed meat. For the first drink I used green cardamom and a little ground cardamom. In a makeshift mortar we crush the cardamom and toss it into a jar or demijohn of spirit.

Next I added to the spirit the squeezed juice of about 5 large lemons. From the rest of the lemons left over after making another batch of the best lemon liqueur in the world.

At the very end I added half a jar of linden honey. Now I wait and we'll see what comes of it after about 2–3 weeks. Every now and then you have to stir the whole thing. We can also add powdered cardamom, in which case at the end you have to filter the whole liqueur well.
And done! The aroma is out of this world! ;)
